Oven Fried Tofu

Ingredients

  • 1 block of extra-firm tofu, pressed and drained
  • 2 T chickpea flour
  • 2 T nutritional yeast
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. dried oregano
  • ½ tsp. salt
  • ½ cup water
  • 1 cup Uncle Sam Original cereal
  • Cooking spray

Directions

Preheat the oven to 350 degrees.

Cut tofu into slices and set aside on a plate. Mix together the chickpea flour, yeast and spices and then stir in the water. The mixture will be pretty thick and you may have to add a bit more water to get it to the proper consistency for dipping. Pour cereal onto a plate or shallow bowl.

One at a time, take a piece of tofu and dip it in the mixture, and then roll it around in the cereal so that all sides are covered. Place on a lightly greased baking pan. Continue the process until all pieces of tofu are covered.

Lightly spray the tofu with non-stick cooking spray or olive oil and bake for about 25 minutes at 350 or until golden brown. I flipped them half-way through to make sure both sides got crispy.
