Place cereal in food processor and pulse until the cereal turns to fine crumbs. Combine cereal and seasonings in bowl and set aside. Pour almond milk in a separate bowl.
Dip each piece of chicken in almond milk followed by cereal mixture. Once evenly coated, place on a greased baking sheet. Lightly spray the coated chicken with Smart Balance.
