The second I dreamed up this recipe idea I couldn’t wait to make it! I mean really ~
Cinnamon Eggnog Oatmeal?!
Yes really. Nothing could be better than a little holiday cheer at breakfast time! No, sillies, there is no booze in this recipe.
This oatmeal comes together very quickly. All you need to do is measure out some old-fashioned rolled oats (not quick cooking ones), Uncle Sam cereal, and don’t forget the eggnog & ground cinnamon.
You can make this when you wake up or the night before you want it. If you do that, you might stay up all night eating it though. Oatmeal is such a yummy bedtime snack!
Having guests over for the holidays? Perfect. This can be your breakfast Christmas morning. Heck, it would be a great breakfast to wake up to after New Year’s Eve celebrations as well.
To pretty things up you need some toppings. Besides, they taste good.
Top your eggnog oatmeal with raisins, dried cranberries & some nuts. Whipped cream would be great too…though this oatmeal is sweet enough for me. You can have some maple syrup or brown sugar handy if you want it sweeter.
Cinnamon Eggnog Oatmeal
YIELD: 4-6 servings
1 cup (80 g) Old Fashioned Rolled Oats
1 cup (72 g) Uncle Sam cereal
pinch of fine Sea Salt
2 teaspoons ground Cinnamon
2 cups (480 ml) Eggnog
1 1/2 cups (360 ml) Milk (any kind, unsweetened)
Heat all ingredients in a non-stick sauce pan (not toppings.) Bring to a boil and stir frequently. Reduce heat, cover the pot and simmer for about 10 minutes. Stir a few times, scraping down the edge of the pan while the oatmeal is simmering. Remove from heat and transfer to bowls. Top with dried fruits, nuts and whipped cream.
