What happens when you deconstruct a blueberry pie and make it a healthy, anytime treat?
You get these lovely layered parfaits that’s what! Want one? Great! They are super simple to make at home.
The beauty of this recipe is how pretty it is and how great it tastes. Remember playing with sand and making those pretty designs in glass jars? These parfaits are kinda like that. Art meets food.
All you need to do is:
Grab a batch of fresh blueberries and some frozen ones too. Make a sauce out of the frozen ones. Keep the fresh ones all plump ‘n perfect.
Take some thick fat-free Greek yogurt. Keep half of it white (sweeten with vanilla stevia drops or some maple syrup.) Take the other half and mix it with the blueberry sauce.
Next you gotta crush up some Erewhon Organic Honey Graham Crackers in a food processor ~ or bang ‘em with a hammer or somethin’.
See, now you are creating pretty textures and flavors for your parfaits.
Then, all your gonna do is carefully layer everything one on top of each other.
This is a fun recipe to make with your kids too. They will have fun layering their own parfaits.
Make ‘em large or small. They would be really cute shooter size too.
Serve these parfaits for brunch or breakfast. They are also great for after-school snacks and keep ya going for a good long time.
If you are vegan then you can use a vegan yogurt or coconut whipped cream instead. All would taste great.
Blueberry Pie Yogurt Parfaits
YIELD: 2-3 servings
- 12 ounces Frozen Blueberries
- 4 ounces Fresh Blueberries
- 2 cups Fat Free Greek Yogurt, divided in half
- Vanilla Stevia Drops (or your favorite sweetener) to taste
- 4 sheets Erewhon Organic Honey Graham Crackers
Blueberry Sauce: Heat frozen blueberries in a saucepan over medium high heat with two tablespoons of water. When the berries start to heat up & sizzle, reduce heat to medium. Cook for about 5 minutes, until berries burst and create a sauce. Stir a few times while cooking. Transfer to a container. Put sauce in the refrigerator to cool completely.
Pulse the graham crackers in the food processor until you get a fine crumb.
Take half of the yogurt and sweeten with vanilla stevia drops or your favorite natural sweetener ~ to taste. Mix into the other half a few spoonfuls of blueberry sauce.
Assemble: Layer the sauce, 2 yogurts and graham cracker crumbs in parfait glasses. Alternate layers so they look pretty. Top with fresh blueberries and graham cracker crumbs.
