What happens when you deconstruct s’mores and make them super duper healthy? S’mores pudding, that’s what!

Oh boy, did I have fun creating this recipe and I am having even more fun sharing it with you!

All you need to do…

Take creamy coconut milk, chill it in the fridge overnight. The goal is to make a thick coconut whipped cream that will act like marshmallow fluff.

The foodie world has gone nuts for coconut everything, especially coconut whipped cream. I have made it in so many flavors and I share them all on Family Fresh Cooking. On my blog, you can find recipes for these flavors: vanilla, mocha, chocolate, pumpkin, cranberry and peanut butter.

In this recipe, we will stick with vanilla and chocolate.

My s mores pudding has layers of chocolate and vanilla coconut cream with crushed Erewhon Organic Honey Graham Crackers. Blissful. Dreamy!

Top with chocolate chips and some more crushed grahams. Simple perfect!

My kids were super surprised to come home to this treat as an after-school snack. My hubs had some for dessert.

Serve this pudding as a casual treat or share with company at parties. When you style it up in pretty parfait glasses it has a lovely elegance.

It is simple to prepare and only takes minutes to assemble.
