Peanut Butter and Jelly Breakfast Bake

We all enjoy a great breakfast bake. Why? Because it is healthy, accessible comfort food. I love waking up bright and early in the morning with breakfast waiting for me in the fridge. Such a treat!
All you need to do is grab a portion of this Peanut Butter & Jelly Breakfast Bake, heat it up, and feast!

This bake is simple to prepare the night before. You can cook it while you run around the house doing other things.
It makes a big batch, which is super handy for busy weekday mornings.
It’s also nice to wake up to on the weekends ~ or serve for brunch.
This recipe is vegan too. Coconut and almond milk give great energy sustaining boost.
Whole grain Uncle Sam cereal combines with old fashioned rolled oats give you go get ‘em energy.

Peanut Butter & Jelly Breakfast Bake
YIELD: 8-10 servings
DIETARY TYPE: Dairy-free, Vegan
INGREDIENTS
3 cups (295 g) Old Fashioned Rolled Oats
2 cups (130 g) Uncle Sam Cereal
1 teaspoon Baking Powder (1/4 teaspoon high altitude)
1/2 teaspoon fine Sea Salt
1 teaspoon ground Cinnamon
1/2 cup (130 g) natural Peanut Butter (smooth or crunchy)
4 cups (960 ml) unsweetened Vanilla Almond Milk
1 can (450 ml) unsweetened Light Coconut Milk
2-3 droppers full Vanilla Stevia Drops
Cooking Spray
Toppings:
Berries
Chopped Peanuts
Fruity Jam (I like fruit-sweetened raspberry)
INSTRUCTIONS
Preheat oven to 350 F with the rack in the middle. Prepare a 3 Qt. baking dish with cooking spray. Whisk together dry ingredients. In another bowl whisk together the wet ingredients. Combine wet and dry well with a spatula, transfer mixture into the baking dish. Bake uncovered for about 35 minutes or until well set and slightly browned on top.
Top with fresh berries, chopped peanuts, jelly and some whipped cream.

Marla, what roll does the cereal play? I’d like to try this, but I need it Gluten free, so I need to know if I can just omit the cereal, or what type of cereal to use to replace it.

Love this! Uncle Sam is one of my favorite cereals. Love that this is vegan. Many breakfast bakes include eggs.
