Who doesn’t love a great, filling muffin? Sadly, some muffins are so full of fattening, unhealthy ingredients that some muffins you buy in coffee shops or even make yourself might as well be cookies rather than something you can feel good about eating or serving to your family.
Enter my family-tested, kid-approved Graham Cracker Raisin Muffins made with Attune’s Erewhon Organic Honey Grahams. If you are a cinnamon fan, you could definitely use the cinnamon graham crackers from Attune instead of the honey. I used honey, organic raisins, succanat, and baking powder that is aluminum-free.
I did my best to use all natural ingredients in this recipe and you can really taste the freshness in every bite. When my kids want a treat after dinner, I give them a muffin with some fruit on the side. If I give them a muffin for a morning snack, I offer them some Greek yogurt to help balance their snack.
The great thing about these little muffins is that they only have 103 calories* each; making them a sensible choice if you are watching your weight. Compare that to the 370 calories in a blueberry muffin from Starbucks.**

Graham Cracker Raisin Muffins
Ingredients
2 cups Erewhon Organic graham crackers (crushed)
1/4 cup succanat
2 teaspoons baking powder (low-sodium)
1 cup soymilk or skim milk
1 egg
2 tablespoons honey or agave syrup
1/4 cup organic raisins
Directions
Preheat your oven to 400 degrees Fahrenheit. Place muffin cups into a muffin tin or spray the pan with non-stick cooking spray.
Combine the graham cracker crumbs, succanat, and baking powder in a medium-sized bowl. In a small bowl, combine the milk, egg, and honey (or agave syrup). Mix the egg mixture with a spoon just until the mixture comes together. Add the wet mixture to the dry mixture and mix until combined. Do not overmix.
Spoon the batter into your muffin tins. Bake for about 15 to 20 minutes. The muffins will be brown and a cake tester should come out clean when inserted into the middle of a muffin.
