Crispy Cereal Mango Parfaits

With the warmer weather finally here we crave lighter foods and bright flavors. We love mango and find any way we can to enjoy this sweet fruit!
Mango is fabulous sliced and eaten by the bowlful. It is also a wonderful addition to shakes and smoothies.
Mango gets even fun in these sweet little parfaits…
You can make them small like I did for little desserts or larger for breakfast or brunch.
These parfaits would be perfect for entertaining guests. For folks who like to keep things on the lighter side ~ these parfaits are the answer to the skinny sweet tooth.
The mango sauce is pure and fabulous! It is sweet enough that you need no refined sugars at all.
It is a simple purée of fresh mango. If you cannot get your hands on fresh, then frozen is OK too.
You can use plain thick greek yogurt or sweeten it a touch with some vanilla stevia drops. Pure maple syrup or a squeeze of honey would be nice too.
The crunchy cereal topping certainly adds to the texture and flavor of these healthy treats.

Crispy Cereal Mango Parfaits
4 servings (adjust ingredients according to what you need for mini desserts or larger meal portions)
2 Mangoes, remove skin & cubed (yields about 10 ounces of sauce)
pinch of Saffron
2 tablespoons Water
a handful of toasted Pecans, chopped
3-6 ounces of fat free thick Greek Yogurt per serving
1/2 cup Uncle Sam
1/2 cup Erewhon Crispy Brown Rice Cereal
1/2 cup Corn Flakes
Method
Bring mango, saffron and water to a boil. Partially cover and simmer about 6 minutes. Purée mango in a blender. Let the sauce cool before assembly.
Assemble parfaits layering yogurt, mango sauce and crispy cereals.

The use of seasonal produce is so smart. Mangoes are one of our favorites, especially when they’re at their peak. And, you can’t go wrong with cereal in a parfait. It’s got the perfect crunch.
