Puffed Rice & Raisin Treats
We were pretty excited to hear from Judi Zucker about her new cookbook “The Ultimate Allergy-Free Snack Cookbook.” She mentioned that our Erewhon Crispy Brown Rice Gluten Free cereal was featured in a few of their recipes and has kindly shared one of the recipes from the cookbook below with you. They will be signing books at Books Inc. on Thursday, May 17th in San Francisco and will be passing out Erewhon cereal coupons as well as hosting a gift bag giveaway at the book signing.
A little more about Judi and her twin sister Shari Zucker, they are known as the “Double Energy Twins,” with a website of the same name, doubleenergytwins.com and became vegetarians at 11 years of age. They wrote their first book, How to Survive Snack Attacks…Naturally! at 16 years old. The twins learned early that nutritious, whole foods gave them sustained energy and helped them to break the women’s one-and two-mile track records at Beverly Hills High School. The book enjoyed success so Judi and Shari soon followed their first book with “How to Eat Without Meat…Naturally” in 1981. Their third book, “Double Your Energy with Half the Effort” was published in 1991. Their fourth book, “The Double Energy Diet”, in 2008 and their latest book, “The Ultimate Allergy-Free Snack Cookbook” (Square One Publishers) in 2012.
Enjoy this no bake honey-sweetened snack. I’ts a little sticky but fun to make and eat!
Puffed Rice & Raisin Treats

YIELD: about 12 snacks
1 cup sunflower seed butter
3 Tablespoons honey
1/4 cup raisins
1 teaspoon ground cinnamon
3/4 cup Erewhon Crispy Brown Rice Gluten Free cereal
1) Place the sunflower butter, honey, raisins and cinnamon in a large mixing bowl and stir until blended. Add Erewhon Crispy Rice cereal and mix until well coated.
2) Form the mixture into 1 inch balls and arrange on a plate or serving platter.
3) Serve immediately or refrigerate and serve chilled
Change it up…
- Add 1 Tablespoon carob powder for a chocolately flavor.
- Add 1/3 cup shredded unsweetened coconut and 1/4 cup of mashed bananas for a tropical twist.

The Zuckers appear on national and local television talk shows, teach Natural Foods cooking classes to adults and children, and maintain their own fitness by running, swimming, and walking daily.
Shari is married to Daniel Kilstofte, owner of a High Tech company, and they have three children. They have twin sons Max and Miles and a daughter Mattea. Judi is married to Chris Mjelde, a dentist. They have two children, a daughter Taryn and a son Tanner. Judi and Shari are living proof that a healthy lifestyle truly works!
