Strawberry Banana Breakfast Bake

I love all kinds of Big Batch breakfast casseroles and bakes. You know why? It means we have amazingly tasty and healthy recipes within reach whenever we need them for busy mornings. Of course, having such a delicious meal ready for weekend nibbles is fun too. This way you can have lazy mornings at play and not too much time spent in the kitchen…
I wanted to test drive my favorite Uncle Sam Original breakfast cereal as a hot cereal. Usually we love this crunchy blend of whole grains and flax seeds with cold milk, nuts, fresh fruit and raisins. As a bowl of cold cereal, it has a great crispy crunch and a well defined, nutty taste.
When baked into my breakfast casserole it takes on a whole new profile. I mixed it with old fashioned rolled oats to create a mixed grain breakfast bake. Uncle Sam cereal softens up and pairs very well with the oats when baked. This is a fun twist on the usual bowl of oats.
Unsweetened coconut milk is a great addition too and we enjoy that in different ways everyday of the week here. Drizzle a little more on top before serving. Some heavy cream or a dollop of greek yogurt would be nice too.
With mashed bananas and strawberries this becomes the ultimate satisfying breakfast. You can serve this recipe for brunch too, as you will have enough to indulge many guests with your savvy breakfast skills. Enjoy for snacks as well.
The protein from the eggs will keep you going throughout the day.
I am a huge fan of breakfast, it really is my favorite meal of the day. As many of you know, I dash out of bed for this meal at 4am (OK sometimes earlier ~ I know that is nuts)
Speaking of nuts, don’t forget to add them to your breakfast casserole. They add healthy fats and even more energy sustenance.

Strawberry Banana Breakfast Bake
10-12 servings
Ingredients
- 3 cups Old Fashioned Rolled Oats
- 2 cups Uncle Sam Cereal (use any variety you love)
- 1 teaspoon Baking Powder
- pinch of salt
- 1 large ripe Banana, mashed
- 3 cups Light Unsweetened Coconut Milk
- 3 cups Water
- 1 cup liquid Egg Whites
- 2 droppers full of Vanilla Stevia Drops, or use some of your favorite
natural sweetener - 8 ounces fresh, chopped Strawberries
- Cooking Spray
Optional Toppings
- Dried Fruit + Raisins
- chopped, toasted Nuts
- Greek Yogurt
- Whipped Cream
- ground Cinnamon
Method
Preheat oven to 350 degrees Fahrenheit with the rack in the middle. Spray a large, oven-safe 4 quart casserole dish with cooking spray. Combine dry ingredients in a bowl. In another bowl mix together mashed bananas, coconut milk, water, egg whites and stevia. Combine all in the baking dish, adding strawberries last. Bake about 35 minutes, until the liquid has been absorbed. Let cool about 10 minutes before serving.

Hi Stephanie, not sure what cereals you have over there. Uncle Sam’s has no refined sugar, some flaxseed, a nice toasty flavor and a small flake. Can you find a match? Perhaps

Great question Lucy! You certainly do not need to add the sweetener. You can sweeten each portion to taste with some maple syrup or honey if desired

I have never heard of Uncle Sam’s cereal is there an alternative to this? I live in Michigan and haven’t even seen it in the stores…. sounds yummy and I would love to make it but not sure what to sub it out for?

I made this and did 1/2 granola I got from my CSA and 1/2 oatmeal and it turned out amazing! Top with vanilla greek yogurt and it keeps me full for hours!
